Is there a list of recommended/tested webcams?

These last two items are the ones that may proove problematic with most any 
enduser community, because they are not "typical", at least not yet.

If the consequencies of not using a 30fps/HD webcam are just a lower picture 
quality transmitted from my side, this is probably acceptable.

What are the consequences of not using a USB mic-headset and relying on a 
typical PC soundcard for sound input+output?
Many of our endusers will be in those shoes.

Of course I agree with the format of the meetings and I am looking forward to 
seeing the progress since our last tests. The gateway to legacy endpoints would 
be very interesting to our group, as you already know and we are hoping it will 
be added soon to SURFNet's setup.
