My guess is that the same technique the carpenter employ to remove wood
is used.
He would use a saw or knife to make a number of cuts to a certain depth,
and then chip the wood between the cuts away.
This gives a convenient and safe way to remove even large amounts of
material with high precision.
Some grinding of the surface may then be needed. What we see traces of
here may be the transversal cuts which obviously
are of slightly different depths.
